The Flying Elmer Salmon Lasagna 

seasonal fresh or crushed canned (preferably by Mutti) tomatoes , fresh baby spinach, cold smoked rainbow trout or salmon, black pepper, creme fraiche, fresh lasagna sheets, parmesan cheese (or similar), lemon

I once shared a salmon lasagna recipe with friends and found people coming back to me for the recipe long after I had lost it myself. So I figured that this time I do right, and share this improved version with everyone for the record, including myself, haha. :) This is the definitive Flying Elmer signature food, and I'm proud to give it out for everyone to try and hopefully modify as well. Of all the lasagnas, this is probably the quickest and lightest so forget all the worry about time and fat, ok? You will make this in 15 minutes.

Reserve chilled white wine for serving. Of course you may start tasting already during cooking if possible. As far as the measurements are concerned, I'm not too picky, so measure the ingredients according to your own liking and choose the ingredients based on quality and availability, there is no right or wrong here.

So lay the tomatoes to an owen pan, cut fresh tomatoes into thin slices and remove the stem. Season with salt and pepper. Spread fresh baby spinach for cover and squeeze lemon all over. Then a thin layer of cold smoked rainbow trout or salmon. Spread some creme fraiche on it, again thinly, it doesn't have to be fully covered. Top it all of with fresh lasagna sheets. Repeat. The final pasta layer should be covered with some creme fraiche and grated cheese, but don't overdo, less is better. Bake in the owen some 20 mins in 200C/390F.

Take it out, let it cool down and set for few minutes, then just enjoy with the white wine that you still hopefully have left some.
